Deets: Eleven Madison Park’s beloved Bake it Nice pop-up series is back for the fall! Starting on September 14th, this highly anticipated event (one of the city's longest lines of the year) will once again offer fans the chance to indulge in exclusive, plant-based pastries crafted by Executive Pastry Chef Laura Cronin.
Following the success of this past spring’s pop-up, this season’s Bake it Nice will feature the viral Madison Squares, in soon to be announced seasonal, fall flavors! Laura is leading the way in the plant-based pastry movement, transforming traditional favorites - like this croissant-inspired delicacy - into innovative, mouthwatering delights that showcase the best of what fall has to offer.
In addition to her signature Madison Square pastries, the pop-up will also offer refreshing Agua Fresca from EMP Beverage Director Sebastian Tollius, coffee to go, and a selection of Eleven Madison Home products, perfect for those looking to take a piece of the experience home, or get a jump on holiday shopping.
This fall series is set to run Saturdays this fall, beginning September 14th, making it a must-visit for anyone looking to savor the flavors of the season.

Led by Laura Cronin, this pop-up series has become a cult favorite, known for its innovative plant-based pastries that combine traditional techniques with modern flavors.
About Laura Cronin
Laura Cronin’s journey into the world of pastry began in her hometown of Berkeley Heights, New Jersey, where she developed a love for baking at a young age. After honing her skills at Johnson & Wales University and the San Francisco Baking Institute, she furthered her education at Paris's prestigious Ecole Gregoire-Ferrandi. Her illustrious career has taken her from San Francisco to New York City, where she now serves as Executive Pastry Chef at Eleven Madison Park. Laura has been recognized as a Rising Star Chef by the San Francisco Chronicle and was named to Zagat’s 30 under 30 list.
