Deets: The pop-up that had lines down the block (battling that even of the cronut craze) is making its highly anticipated spring return. Eleven Madison Park’s Bake it Nice is back, and if last season’s turnout was any indication, it’s about to take over New York’s food scene once again.
On April 19th, May 10th, and June 14th, pastry fanatics will line up for Madison Squares — the flakey, plant-based, cult pastries crafted by Executive Pastry Chef Laura Cronin, who’s redefining vegan baking. Each pop-up brings rotating seasonal flavors!
These croissant-inspired squares are more than just viral fodder — they offer Michelin-starred creativity at bakery counter prices, letting New Yorkers taste the elevated techniques of Eleven Madison Park in a totally approachable (and portable) format. It’s part of why Bake it Nice has become a true downtown obsession.
And it’s not just first-timers flocking in: locals return week after week, eager to see what new, never-before-seen flavor Laura has dreamed up next. Each drop delivers a wildly inventive, seasonal twist that keeps even the most seasoned foodies guessing — and coming back.
The pop-up also features refreshing Agua Fresca by Beverage Director Sebastian Tollius, coffee to go, and select Eleven Madison Home goods for anyone looking to take the experience home.

About Laura Cronin
Laura Cronin’s journey into the world of pastry began in her hometown of Berkeley Heights, New Jersey, where she developed a love for baking at a young age. After honing her skills at Johnson & Wales University and the San Francisco Baking Institute, she furthered her education at Paris's prestigious Ecole Gregoire-Ferrandi. Her illustrious career has taken her from San Francisco to New York City, where she now serves as Executive Pastry Chef at Eleven Madison Park. Laura has been recognized as a Rising Star Chef by the San Francisco Chronicle and was named to Zagat’s 30 under 30 list.
